Ingredients
  

Salad
  • 4 cups cubed watermelon seedless
  • 1 cup crumbled feta cheese
  • 1/2 cup fresh mint leaves chopped
  • 1/4 cup red onion thinly sliced
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice fresh
  • 1 teaspoon honey
  • 1/4 teaspoon black pepper freshly ground

Method
 

  1. In a large bowl, combine the cubed watermelon, crumbled feta cheese, chopped mint, and sliced red onion.
  2. In a small bowl, whisk together the olive oil, lime juice, honey, and black pepper for the dressing.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately.

Notes

For an extra touch, you can add a sprinkle of toasted pumpkin seeds or a drizzle of balsamic glaze before serving.
