Ingredients
  

For the Salsa
  • 4 cups seedless watermelon cubed
  • 1 cup red onion finely diced
  • 1/2 cup fresh cilantro chopped
  • 1 jalapeño seeded and minced (optional)
  • 1/4 cup lime juice freshly squeezed
  • 1/2 tsp salt or to taste

Method
 

  1. Combine the cubed watermelon, diced red onion, chopped cilantro, and minced jalapeño (if using) in a medium mixing bowl.
  2. Pour the fresh lime juice over the ingredients. Sprinkle with salt.
  3. Gently toss all ingredients together until well combined.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Taste and adjust seasoning if needed before serving.

Notes

This salsa is best served chilled. It pairs well with grilled fish, chicken, or pork, in addition to tacos. For a spicier salsa, leave some seeds in the jalapeño.
