- Preheat your oven to 350°F (175°C). Cut each biscuit into 4 pieces. Place the biscuit pieces in a greased 13x9-inch baking pan.
- In a large bowl, combine the shredded chicken, sliced mushrooms, and 1 cup of the Thai peanut sauce. Spread this mixture evenly over the biscuit pieces in the pan.
- Top the chicken mixture with 1 cup of the shredded mozzarella cheese, the chopped red pepper, shredded carrot, and sliced green onions.
- Sprinkle the remaining 1 cup of mozzarella cheese over the vegetables.
- Bake for approximately 40 minutes, or until the topping is set, the cheese is melted, and the biscuits are cooked through.
- Remove from the oven. Sprinkle the chopped honey-roasted peanuts over the top. Serve immediately with the remaining Thai peanut sauce on the side.
