  • 1 bunch Les Petit Carrots of Many Colors from Trader Joe's
  • 1 head Purple, Orange & White Cauliflower cut into florets and blanched
  • 1 Watermelon Radish sliced
  • 1 Cucumber sliced
  • 1 bag Mini Bell Peppers halved
  • 1 container Mini Heirloom Tomatoes
  • 1 jar Sweety drop peppers
  • 1 bunch Broccolini
  • 1 bunch Celery
Carbs
  • 1 bag Pita Chips
Accoutrement
  • 1 jar Castelvetrano Olives
  • 1 bag Pistachios
Dips
  • 1 Hummus
  • 1 Ranch
  • 1 Dill Dip I like Galbani
Garnish
  • 1 bunch Fresh Dill
  • 1 bunch Chives
  • 1 bunch Parsley
  • 1 bag Roasted chickpeas

Method
 

  1. Place the dips, olives, and sweety drop peppers in separate small bowls. Position these bowls in the center of your serving board to anchor the arrangement.
  2. Arrange the cucumber slices and watermelon radish slices in the center, between the dip bowls. Then, starting from the center and working outwards, place the red and yellow tomatoes in separate piles.
  3. Fill in the remaining spaces around the outside of the board with cauliflower florets, broccolini, more radish slices, carrots, celery, and mini bell peppers. Separate ingredients of similar colors to create visual contrast.
  4. Garnish the dill dip with fresh dill, the ranch dip with chives, and the hummus with thyme. Add a drizzle of olive oil and roasted chickpeas to the hummus if desired.
  5. Serve the pistachios and pita chips on the side of the main arrangement.

Notes

This veggie tray can be assembled ahead of time. Store components separately and arrange just before serving for maximum freshness.
